Ninh Binh Traditional Food

In Ninh Binh, the food, in general, is cooked in Northern Vietnamese style that you will normally find in other provinces and cities. The real traditional food of Ninh Binh is from the ingredients for their daily meals: goat meat. That’s something you will find in almost every restaurant in Ninh Binh even though there are not a lot of restaurants in the city and between tourist attractions.


Goat Meat

In Ninh Binh, the locals raise a lot of goats for meats. It is not hard to see the goats eating grasses on the roadsides when you are driving to Ninh Binh. Sometimes, a family just raise a few goats for their own consumption. Compared to beef and pork, goat meats are said to be better to our health and has a unique sweet taste. There are many dishes cooked with goat meat in Ninh Binh from grilling to steaming; however, the one that stands out is the stir-fried goat meat with sesames and lemongrasses. If you have the chance to visit Ninh Binh, you will be able to taste Ninh Binh’s goat meat definitely.


Burned Rice 

Burned Rice is a literal translation of the Vietnamese name ‘Com Chay’. Com Chay is made of rice fried or dried until the point it turns crispy. They are then served with dried shredded pork called ‘ruoc’ or ‘cha bong’. Depending on your preference, ‘Com Chay’ could be served with some sauce to add flavor as well. People usually have Burned Rice as a snack and nowadays it is common to buy precooked Com Chay at local shops instead of making it yourself.
