Live ‘ruoi’, mostly found in Hai Phong and Nam Dinh, are transported to Hanoi and other big cities. To make ‘cha ruoi’, ruoi needs first cleaning in water. After that, ruoi will be mixed with ground pork, eggs, chops of dill, onions, green onions, and tangerine peels. The mixture is then fried on a hot saucepan till it turns yellowish brown.
The dish is best when served hot with a bowl of rice and some fish sauce. In Hanoi, ‘cha ruoi’ is a well-loved seasonal delicacy.
